I try, and I try, but I just can’t stand eggs! Ok, technically that’s not true, I like them over medium and soft boiled. I can even eat hard boiled egg white, just not the yolk. Once in a great while I can even eat scrambled eggs.
Here’s the thing- my doctor wants me to cut out the carbs. I’m not diabetic, but my body thinks it is (PCOS causes insulin resistance). Basically, my body makes insulin, but doesn’t seem to know that it’s there, so it keeps making insulin but doesn’t absorb it. Happy day.
Anyway- that’s where the eggs come in. I can’t afford much in the way of meat, and stress in my job makes me need something for breakfast that will keep me full for 4-5 hours. That means that nuts aren’t enough protein and legumes have to be paired up with something else. I also have to avoid most soy products as being hypo-thyroid runs in my family. Therefore, no meat substitutes.
So what’s a cheap source of protein? Eggs. I’d made South Beach Diet mini-quiches before, and while I didn’t like them, they were good for being quiche. So, I thought if I left out the spinach and added green and hot peppers (which I like), maybe I could stomach it. I even added a spoonful of ricotta cheese to the middle of each one since I love ricotta, and my doctor recommended having a small bowl of it for a snack. (No, I’m not kidding. Apparently it’s similar to cottage cheese).
I made a dozen of these, and could only eat 4 (two Tuesday, two Wednesday). I couldn’t handle any more- so I packed some up for my husband’s lunch today. He loves them. Thank goodness. I hate wasting anything, so now I can pack up the remainders for him. I have to admit, I really think the ricotta was a touch of genious on my part.
